Kosher Vegetable Soup

Ingredients
  • 8 tsp Superior Touch Kosher Vegetable Base
  • 8 cups of water
  • 2 diced potatoes
  • ½ cup sliced carrots
  • ½ cup diced onion
  • 2 minced garlic cloves
  • ½ cup green pepper
  • 1 cup diced tomatoes
  • ½ cup corn
  • 1 bay leaf
  • ¼ tsp black pepper
  • 1/8 tsp thyme
  • ½ cup diced zucchini
Instructions
In a soup pot, dissolve 8 tsp Superior Touch Kosher Vegetable Base in of 8 cups of water. Bring to a boil. Add 2 diced potatoes, ½ cup sliced carrots, ½ cup diced onion, 2 minced garlic cloves, ½ cup green pepper, 1 cup diced tomatoes, ½ cup corn, 1 bay leaf, ¼ tsp black pepper, and 1/8 tsp thyme. Cover, reduce heat and simmer 15 minutes or until potatoes are tender. Add ½ cup diced zucchini and simmer an additional 5 minutes until zucchini is tender. Remove bay leaf. Serve hot.
