Mexican Rice

Ingredients
  • 1 ½ cups water
  • ½ tsp. black pepper
  • 1 ½ teaspoons of Superior TouchTM Mejor Que Caldo Chicken Tomato Base.
  • 2 teaspoons of vegetable oil
  • 1 small chopped onion chopped
  • 1 garlic mince clove
  • 1 cup white rice
  • 1 tomato pureed
  • 1 cup of fiesta frozen corn
Instructions
In a small saucepan, combine 1 ½ cups water, ½ tsp. black pepper and 1 ½ teaspoons of Superior TouchTM Mejor Que Caldo Chicken Tomato Base. Bring mixture to a simmer. In large saucepan, heat 2 teaspoons of vegetable oil over medium heat. Add 1 small chopped onion chopped, 1 garlic mince clove, and 1 cup white rice. Cook approximately 10 minutes, stirring until lightly browned. Add 1 tomato pureed, 1 cup of fiesta frozen corn and broth that has been simmering. Scrap rice down and stir well. Cover, and continue to cook over medium-low heat for approximately 20 minutes until all liquid is absorbed. Remove from heat and fluff rice. Serve hot.
