Chicken Tortilla Soup

Ingredients
  • 1 cup chopped onion
  • 4 minced garlic cloves
  • 1 chopped jalapeno
  • ½ cup chopped green pepper
  • 2 tsp olive oil
  • 7 ½ cups water
  • 7 ½ tsp Superior TouchTM Mejor Que Caldo Chicken Base
  • 4 small chicken breast
  • 2 cups frozen corn
  • 2 tsp cumin
  • 1 tsp chili powder
  • ¼ tsp cayenne pepper
  • 1-14 ounce can diced tomatoes
  • 1-8ounce can tomato sauce
  • crushed tortilla chips
Instructions
In a large soup pot, Sauté until soft 1 cup chopped onion, 4 minced garlic cloves, 1 chopped jalapeno and ½ cup chopped green pepper in 2 tsp olive oil. Combine 7 ½ cups water and 7 ½ tsp Superior TouchTM Mejor Que Caldo Chicken Base. Add to pot along with 4 small chicken breast, 2 cups frozen corn, 2 tsp cumin, 1 tsp chili powder, ¼ tsp cayenne pepper, 1-14 ounce can diced tomatoes, and 1-8ounce can tomato sauce. Bring to a boil, reduce heat and simmer 15 minutes. Remove chicken breasts, shred, return to the pot and simmer an additional 45 minutes. Top with crushed tortilla chips. Serve hot.
