French Onion Soup
Au Jus Base

This recipe uses:
Premium Bases: Au Jus Base

Ingredients
  • ¼ cup butter
  • 2 ½ lbs peeled, sliced onions
  • ½ tsp black pepper
  • 1 tbsp paprika
  • 1 bay leaf
  • 5 cups of water
  • 7 tsp Superior TouchTM Au Jus Base
  • 6 tbsp flour
  • 2 ½ cups water
  • crusty bread
  • grated Swiss cheese
Instructions
In a large soup pot, melt ¼ cup butter. Add 2 ½ lbs peeled, sliced onions. Sauté on low for 1 ½ hours, stirring occasionally. Add ½ tsp black pepper, 1 tbsp paprika and 1 bay leaf. Sauté over low heat 10 minutes more, stirring frequently. Combine 5 cups of water and 7 tsp Superior TouchTM Au Jus Base. Add to pot. Increase heat and bring to a boil. Dissolve 6 tbsp flour in 2 ½ cups water. Stir into boiling soup. Reduce heat and simmer slowly for 2 hours. Ladle soup into ovenproof bowls. Top each bowl with a slice of crusty bread and grated Swis s cheese. Place under broiler until cheese bubbles. Serve hot
